GENERAL SUMMARY: The Culinary Services Manager is responsible for food planning, preparation, service, and supervision of the ACC Maple Tree Village Dining Services team. The position oversees the coordination of the Dining Services Staff, follows the Dining Services Department budget, and ensures dietary and nutritional excellence for residents. The Dining Services Supervisor reports directly to the ACC RCFE Administrator and has a consulting relationship with the Culinary Services Manager, ACC Care Center. The Culinary Services Manager position is an exempt, full-time position.
ESSENTIAL JOB FUNCTIONS:
- Ensures that all aspects of daily food service are completed on a timely basis for both Memory Care and Assisted Living residents.
- Develops and creates monthly menus for community & on/off site community events; participates in community programming, marketing and events.
- Oversees food preparation services for sister properties as needed.
- Plans & organizes assignments & workflow for maximum efficiency.
- Provides back-up coverage for Cooks, Prep Cooks and Culinary Assistants.
- Follows all food service requirements, policies, procedures, applicable laws, rules and regulations.
- Hires, trains, coaches, counsels staff; conducts employee performance evaluations.
- Ensures adequate support staff is available to cover all meals, snack times, and special food activities throughout the day.
- Responsible for quality, nutritious meals to be properly plated/served at appropriate temperatures.
- Provides nutritious, attractive modified and special diets as ordered by a resident physician.
- Ensures that main kitchen, ancillary kitchens and dining areas are kept clean, sanitary, attractive and ready for inspection at all times.
- Maintains records/department logs to be kept current/ready for inspection at all times.
- Receives regular consultation from qualified consultant, and keeps a written record of the visits.
- Maintains supplies of nonperishable foods for a minimum of one week and perishable foods for a minimum of two days on the premises at all times.
- Posts menus minimum of one week in advance in a location visible to residents.
- Retains menus for a min of six months, or as directed by the Administrator.
- Practices conservation of equipment and supplies, keeping them clean and ready for use.
- Recognizes/ respects resident’s emotional, social, cultural, and religious needs and beliefs.
- Provides a variety of food with respect to cultural and religious backgrounds.
- Partners with residents and families to obtain suggestions
- Maintains food budget/supply; ensures budget & overtime not exceeded without permission.
- Maintains confidentiality per residents and families.
- Performs duties according to company policies and procedure manuals, and promotes the Corporate Compliance Policy, including the Health and Insurance Portability Act (HIPAA), among subordinates.
- Attends and participates in required staff meetings and training programs.
Qualifications
REQUIREMENTS:
- A high school diploma/G.E.D./equivalent experience; culinary or food service training preferred.
- Knowledge of requirements for providing a daily diet to meet resident needs; menu planning; selecting, storing, preparing, and serving food in a safe and healthful manner.
- Experience with Asian cuisine desired.
- Experience in preparing meals for twenty-five or more people; catering/special events preferred.
- Ability to supervise others; effective verbal/written English communication skills.
- Flexibility and willingness to work evenings or weekends as needed.
- Must be at least 18 years of age and able to pass a background check.
- Certified in first aid, or able to complete certification training.
- Must pass approved, accredited food safety certification examination, or be able to obtain certification.
- Demonstrate proper use and knowledge of body mechanics and safety mechanics, and compliance with all OSHA (Occupational Safety and Health Act) regulations.
- Basic knowledge computer skills; email, word processing, and Excel spreadsheets.
PHYSICAL DEMANDS / REQUIREMENTS: Physical demands vary from sedentary activities to hands-on resident care which includes lifting, bending from waist, stooping, and twisting as conditions warrant. May include infrequent assists of residents over 100 lbs. Objects or residents weighing more than 50 lbs. are moved only with the assistance of another worker and/or appropriate equipment. Hours of duty may be long and irregular, including some evenings and weekends. May be exposed to potentially dangerous chemicals. May occasionally lift or carry a maximum of 40 pounds, at a height of 3 to 4 feet, for a distance 30 yards. Employee may use hands for repetitive simple grasping, pushing and pulling, and fine motor manipulation. Employee should be able to bend, squat, kneel and reach frequently.
Salary : $65,000 - $70,000
