About The Role

Ai Fiori is seeking a passionate, knowledgeable, and service-oriented Beverage Manager to oversee all aspects of our beverage program, including wine, spirits, cocktails, and non-alcoholic offerings. The ideal candidate will bring deep industry wine knowledge, proven fine dining experience, and a strong sense of hospitality to elevate our guest experience through exceptional beverage offerings and staff training.

Key Responsibilities

• Oversee the daily operations of the beverage program, including inventory, ordering, cost control, and menu development
• Maintain and build relationships with beverage vendors and distributors
• Oversee and suggest pairings with meals to elevate the customer fine dining experience.
• Collaborate with the culinary and front-of-house leadership teams to ensure seamless pairing and service
• Develop and maintain an extensive, dynamic wine list and seasonal cocktail program that aligns with Ai Fiori’s cuisine and guest expectations
• Train and educate FOH team on wine and spirits knowledge, service techniques, and pairings
• Lead by example in service execution, including floor presence and guest engagement
• Ensure all beverage operations comply with health, safety, and legal regulations
  
  

Qualifications

• 2 years of experience in a beverage manager or sommelier role in a fine dining or Michelin-level environment
• Advanced wine and spirits knowledge; certification from CMS, WSET, or equivalent preferred
• Strong leadership and communication skills
• Passion for hospitality and genuine interest in delivering an exceptional guest experience
• Proven track record with beverage cost control, vendor management, and staff development
• Familiarity with NYC liquor laws and compliance standards
• Ability to work evenings, weekends, and holidays as needed
