Aicota Health Care Center is seeking a full time Culinary Manager. The successful candidate plans, organizes, directs, controls and supervises the activities of the culinary department to provide culinary services therefore meeting professional standards, regulatory standars and the nutritional needs of the residents. The candidate will have completed or will be currently enrolled in a state approved Dietary Manager Course and possess certification of the same.

Supervisory Responsibilities:
Culinary Services Supervisor- Culinary Staff (Cooks and Aides)
Duties/Responsibilities:
- Directs and supervises all dietary food preparation and distribution services.
- Responsible for purchasing food and supplies for the dietary department. The ability to know when consultation is necessary with the Administrator before purchase of certain food supplies and equipment for the dietary department.
- Takes physical inventory, receives and checks deliveries for accuracy and acceptability. Responsible for proper storage of supplies.
- Participates in the interviewing and selection process for dietary personnel.
- Responsible for completing at least an annual performance evaluation for all dietary personnel.
- Planning and conducting written and on-the-job orientation programs for new dietary personnel and continuing in-service education for all facility personnel, if there is no one designated who is responsible for all in-service education.
- Responsible for writing and maintaining current job descriptions for all dietary department positions.
- Is a member of and actively participates on the following committees, (but not necessarily limited to): Department Head and Patient Care Conferences.
- Responsible for scheduling duty hours, duty assignments and instructing personnel on their specific job duties and responsibilities.
- Responsible for assuming the duties of cook or dietary aide as necessary.
- Responsible for developing, implementing and assessing compliance with departmental policies and procedures.
- Assists the Dietary Consultant in writing menus.
- Responsible for supervising food preparation, checking the food temperatures and palatability.
- Responsible for seeing that food is ready for the appropriate serving times.
- Responsible for processing new diets and diet changes from the nursing department.
- Responsible for checking diets against physician’s order to ensure accuracy of the diet served to a specific resident.
- Responsible for making routine visits to all facility patients/residents to discuss their specific likes and dislikes, explain dietary requirements to them, develop a patient/resident care cardex and thereby promote better food service.
- Determines, in conjunction with Administration, the number of professional and non-professional staff necessary to meet the nursing needs of the patients/residents.
- Responsible for working with department heads and other facility employees to maintain compliance with all mandatory and voluntary agencies and third-party payer mandates, such as: Minnesota Department of Health, Minnesota Department of Welfare, Minnesota Department of Health Quality Assurance Review Program and Peer Review (MAHCF).
- Responsible for reading all plans for Safety, Infection Control, Fire and Emergence as established by either this department and/or facility and for knowing the responsibilities in conjunction with the plans, policies and procedures as defined therewithin.
- Responsible for coordinating dietary services with other facility disciplines to assure that the nutritional needs of the patients/residents are met.
- Recommending and/or terminating employment of dietary personnel when necessary. Issuing employment warning slips when appropriate.
- This responsibility may be conducted in conjunction with Administration; however, Administration must be informed of all termination’s recommended, or employment warnings issued, and a copy of the information supplied for the employee’s personnel record.
- Responsible for other job duties and responsibilities as assigned by the Administrator.
- Plans and assists in preparation of special meals for parties, picnics and dinner meetings.
- Inspects dietary department regularly to ensure that the department and department equipment is maintained in a sanitary and safe condition.
- Responsible for development and maintenance of dietary service objectives, standards of dietary practices, dietary policies and procedures and thereby implementing the dietary philosophy as established by Aicota Health Care Center, Inc. and the dietary department.
- Responsible for developing a standardized recipe file.
- Maintain freezer, cooler, all storage areas in sanitary condition.
- All other duties as assigned.
Required Skills/Abilities:
- Must be able to read, write and effectively communicate with people of both professional and non-professional backgrounds.
- Must function at a high level of independence, be cooperative and possess above average supervisory skills and have high standards of self-integrity.
- Must possess a working knowledge of the regulations for compliance with state and federal mandatory and voluntary surveying agencies is a benefit.
- Maintains knowledge of employee relations, ethics, food sanitation, safety, infection control, food and labor laws, housekeeping procedures and accepted food service techniques.
- Must be familiar with basic principles of nutrition as related to menu planning, established patterns for modified diets, preparation of quality foods, high standards of food service, large scale purchase and preparation of food and basic principles of management.
- Must possess willingness and tact in working with other department heads and other professional persons. He/she must be able to supervise and secure cooperation of other employees in the department.
- Must be willing to perform duties and responsibilities that are not necessarily documented in this job description, but that are within the scope of practice of this position.
Typical Working Hours:
This is a full-time, salaried position. Typical working hours are Monday - Friday, from 8am - 4:30pm. Hours are subject to change based on the needs of the facility.
