- Deliver guest service the Penn Way by ensuring every interaction includes our Red Carpet Service Standards. Provide timely and knowledgeable service; always find solutions to guests’ problems. Use guest name when appropriate. Thank the guest and invite them back. - Responsible for the day to day operations of all Food & beverage outlets.
- Effectively respond to Manager’s requests in all areas of customer interaction and customer concerns.
- Staff, schedule, evaluate, train, develop and monitor personnel. Provide discipline and other employment actions as needed.
- Understand department objectives, standards, guidelines and budget to achieve effective supervision of the department.
- Assist Food & Beverage Manager in the development and implementation of department management plans including budgets, labor schedules and systems of accountability.
- Assist Human Resources in the development and implementation of policies and procedures and rules including SOP manuals, to promote compliance with company and regulatory guidelines.
- Ensure staffing levels are appropriate based on business volume.
- Ensure restaurant personnel are meeting or exceeding our service standards.
- Promote the proper treatment of our customers and employees by resolving complaints, answering of questions and providing general service.
- Conduct informative, positive, and upbeat “All Aboard” meetings.
- Understand department objectives, standards, guidelines and budget to achieve effective supervision of department.
- Increase restaurant revenues through research and taking positive steps to adjust or change menu offerings, service, portion control, presentation and waste.
- Ordering of product and supplies for each outlet using Stratton Warren ordering system.
- Maintain the viability and integrity of all restaurant operations.
- Supervision of all aspects of Food and Beverage department including front & back of house operations.
- Employee may be required to perform duties outside of their normal job description where, in the Company’s judgment, it is necessary in the interest of efficiency, productivity or improved guest service.
- Conducts all business activities in compliance with Company Policy and Procedures, Collective Bargaining Agreements, and all State and Federal regulations and internal controls.
- Ensures compliance within the department.
- Directly supervises all front of the house F&B employees.
- Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring, scheduling and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

- EDUCATION and/or EXPERIENCE
- Preferred Associates Degree and three years of experience in restaurant supervision or equivalent combination of education and experience.
- Proven skills in managing high volume casual full-service dining establishments
- Culinary background a plus
- Good interpersonal and leadership skills
- Knowledge and familiarity with computers, including the Microsoft Office Suite. Familiarity with Micros preferred.
- LANGUAGE SKILLS
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
- Ability to write routine reports and correspondence.
- Ability to speak effectively before groups of customers or employees of organization.
- MATHEMATICAL SKiLLS Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
- Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
- REASONING ABILITY Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
- Ability to deal with problems involving several concrete variables in standardized situations.
- CERTIFICATES, LICENSES, REGISTRATIONS
- Must be able to qualify for licenses and permits required by federal, state, and local regulations.
- Required to obtain and maintain TIPS certification.
