Job Description
Embark on a culinary adventure where your creative flair and passion will elevate an entire experience for our guests. This role will help lead our culinary team and curate exquisite menus, all while bringing a special touch to each interaction- leaving a lasting impression on our guests and team members.
- Oversee daily preparation checklists and verification processes for the prep kitchen
- Uphold immaculate cleanliness standards throughout all cooking areas, refrigerators, and work surfaces
- Plan and organize upcoming events with meticulous attention to ingredient requirements and timing
- Execute precise mise en place for each function, ensuring complete readiness 30 minutes before service
- Implement effective FIFO protocols for all ingredients and prepared items to maintain quality and reduce waste
- Regularly inspect all cooking equipment for functionality and coordinate necessary maintenance
- Address all dietary restrictions and food allergies with careful attention to cross-contamination prevention
- Ensure consistent portion sizes and adherence to established recipes and presentation standards
- Maintain proper food temperatures throughout service (cold items fresh and chilled, hot items on heated plates)
- Demonstrate exceptional attention to detail in both preparation and final presentation of all dishes
- Troubleshoot service challenges promptly to maintain seamless guest experiences
- Meet or exceed the Director of Culinary's standards for taste, quality, and presentation
- Provide constructive coaching to team members while fostering a positive, collaborative environment
- Communicate effectively with guests regarding menu details, ingredients, and event logistics
- Collaborate with the banquet team on tasting events and menu development for future functions
- Create innovative monthly staff meal menus for The Canteen utilizing ingredients efficiently
- Manage all culinary aspects of the Dew Bar Food Truck including menu planning and execution
- Support broader culinary operations during high-volume periods or special circumstances
- Adapt to changing priorities and additional responsibilities as assigned by management
Pay Range: $80,000/year - $90,000/year
Qualifications
- Minimum of 3-years’ experience in food service/hospitality; high-end, luxury restaurant cooking experience as a Sous Chef is desired
- Culinary Certificate or Degree and/or ServSafe Certification is preferred.
- Professional appearance and manner, good character to work in a fast-paced team.
- Positive, honest, and energetic work ethic.
- Having flexible schedule availability to accommodate weekends and holidays when applicable
- Must be able to stand for at least 8 hours and be able to lift up, push, and pull at least 50 pounds.
- Be able to multitask and maintain a calm demeanor in stressful situations and busy service.
The ability to manage his/her own time on a daily basis to execute what is needed from the operation.
