JOB SUMMARY
Maintains kitchen work areas and restaurant equipment and utensils in a clean and orderly condition and keeps food production area in a clean, orderly, and sanitized condition by performing the following duties.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Washes pots, pans, dishware, flatware, glassware, and trays.
- Sweeps and mops kitchen floors.
- Washes worktables, walls, and refrigerators.
- Segregates and removes trash and garbage and places it in designated containers.
- Mop all food production floors.
- Clean all mats.
- Clean all floor drains, sinks, countertops and cooking equipment.
- Maintains and cleans the sinks’ “big dippers”.
- Washes hood filters and grease catches.
- Keeps work area clean and free of clutter.
- Maintains Casino cleanliness as delegated by supervisor.
- Maintains cleanliness of kitchen equipment.
- Fills dishwashing equipment with cleaning detergents and reports any needed maintenance or repairs to supervisor.
- Must wear black non-slip shoes or temporary non-slip shoe covers.
- Conducts advanced cleaning and sanitation procedures while using safe chemical handling practices.
- Performs deep cleaning of equipment, which includes moving heavy equipment, and additional special cleaning projects.
- Other duties as assigned by management, including any supervisor, manager, or executive.

QUALIFICATIONS
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. EDUCATION and/or EXPERIENCE
High school diploma or GED equivalent and preferably up to one year related experience or training.
LANGUAGE SKILLS
Ability to read a limited number of two- and three-syllable words and to recognize similarities and differences between words and between series of numbers. Ability to print and speak simple sentences.
MATHEMATICAL SKILLS
Ability to add and subtract two digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance.
REASONING ABILITY
Ability to apply common sense understanding to carry out simple one- or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.
CERTIFICATES, LICENSES, REGISTRATIONS
While employed, you must maintain a valid and active Blue Lake Tribal Gaming Commission License.
OTHER QUALIFICATIONS
Familiar with sanitation standards for restaurants. Must be able to work without supervision.

The noise level in the work environment is usually loud.
