Constellation is seeking an Executive Chef at Carnegie Hall. We are responsible for all culinary and back-of-house operations with Constellation Culinary Group at Carnegie Hall. Operations include a Pre-Concert restaurant, Café, Concession Bars and Full-Service Catering generating 5 million dollars in annual revenue. Role will involve menu development for retail operations, menu planning for custom requests and oversight of food quality produced on-site by our in-house culinary team and off-site by our organization’s Commissary.
Compensation: $110,000 plus bonus

What you'll be doing:
- Support the overall needs of the Operation
- Attend weekly “BEO” meetings reviewing upcoming events
- Create and implement plans for BOH operations reflecting needs for each and every event
- Regularly review Site Menus to ensure food is correctly quantified for upcoming events and ingredients accurately line up with menu descriptions
- Maintain Organized BOH kitchen areas that comply with NYC Department of Health and our organization’s internal Food Safety guidelines
- Ensure all food handling, storage areas and paperwork comply with NYC Department of Health and our organization’s internal Food Safety guidelines
- Support Sales Team in menu planning for upcoming events as needed
- Hold final approval on all Custom Menu requests
- Meet Due dates as directed by leadership team for submission of menus produced on-site
- All internally produced menus should be costed in advance of submission to include expenses for food and labor
- Function as a lead Chef for a minimum of 40% for all events held at Carnegie Hall over the course of the Fiscal Year
- Meet with Lead Chefs for any event you will not be present for to review event details
- Create weekly schedules for BOH department
- Record monthly inventory
- Stock Kitchen with necessary supplies
- Sets and implements kitchen policies and procedures
- 3 years management experience in a quality restaurant operation.
- Prior private dining and/or catering experience preferred.
- Degree in culinary field preferred.
- Food Handlers Certification.
- Knowledge of State Health and Sanitation Guidelines.
- Ability to handle multiple tasks and work effectively, independently, and efficiently with time constraints.
- Must be creative, innovative, and proactive.
- Must be detail oriented and perform work accurately and timely.
- Proficient computer skills necessary including Microsoft Office.
- Financial management cost controls, food and labor cost management experience required.
- Ability to effectively, professionally, and respectfully communicate with co-workers, supervisors, vendors, and clients.
- Able to work a flexible schedule in order to accommodate business levels (weekend and holiday availability required).
