What are the responsibilities and job description for the Executive Sous Chef position at Crystal Springs Services?
Crystal Springs Resort is looking for an Executive Sous Chef to join our culinary team. Crystal Springs is home to an array of 10 indoor and outdoor restaurants, bistros, pubs, and cafes, ranging from 4-star dining at the award-winning Restaurant Latour , or our very own Chef's Garden. Responsibilities:
- Execution and compliance with directives from upper management
- Daily walk through and inspection of all food related operations
- Proper collation of culinary schedule
- Proper collation and or delegation of the following but not limited to, prep lists, recipe binders, plate buildouts, menu composition, and costing.
- Clear communication with Front of House as it pertains to food related issues including but not limited to, specials, allergies, shortages, menu changes, personal adjustments, or any other issues that may affect service.
- Develop an instinct for constant improvement in the following areas: plate presentation, menu development, staff development, guest satisfaction, efficiency related to execution, and overall kitchen sanitation
- Assistance in inventory log and controls
- Proper commutation with fellow culinary team members
- Calm and professional demeanor at all times
- Hands on approach to relieve and train hourly culinary staff, and Sous Chef staff
- Organization and maintenance of all cooking equipment and refrigeration.
- Labor allocation and controls
- Actively engage staff, to console, teach, coach, and train.
- Attendance of meetings
- An overall attitude of ownership and leadership in regards to all things culinary within the restaurant setting.
Requirements:
- Culinary degree or certificate preferred.
- Three years or more of sous chef experience.
- Hold or have the ability to obtain proper Servsafe Manager Certificate
- Must be able to speak, read, write and understand the primary language(s) used in the workplace i.e. English
- Requires both written and verbal communication skills
- Must have competent computer skills, in excel, and Word
- Must have superior culinary skills
- Must have superior problem solving skills
