Food and Beverage Manager

The Food and Beverage Manager is responsible for the front of house Food and Beverage Department Team Members. Will also oversee all catered events.

DUTIES AND RESPONSIBILITIES:

1. Staffing and scheduling of departmental Team Members.
2. Complete evaluations and corrective action relative to Team Members.
3. Develop and maintain budgets to manage food, non-food, and equipment costs.
4. Negotiate Food and Beverage items and prices with vendors.
5. Ensure proper delivery, and or instillation of Food and Beverage supplies, and equipment.
6. Maintain a strong focus on safety and sanitation in all areas.
7. Develop in-service training plans to aid the professional development of staff and to address the needs of continuing quality improvement.
8. Coordinate operations of the department with others to maintain a productive working relationship.
9. Oversees security of the kitchen and storerooms with regard to food supplies and equipment.
10. Maintain an accurate inventory of all food, kitchen supplies, and equipment.
11. Maintain confidentiality and discretion and protects the assets and information of the company.
12. Held accountable to the highest degree for the accuracy and thoroughness of departmental records and reports.
13. Provides monthly administrative reports to the Tribal Council.
14. Represent Eagle Mountain Casino in all culinary concerns as requested.
15. Must attend and be certified in all applicable training programs required.
16. All other departmental duties as assigned by Food and Beverage Director.

QUALIFICATIONS AND REQUIREMENTS:

1. Minimum age requirement is twenty-one (21).
2. Must have five (5) years experience in Food and Beverage industry, including three (3) years management/ supervisory experience.
3. Minimum of AA in management or hospitality, or cumulative experience and education.
4. Must be able to identify strategic issues, prioritize workload and identify and develop effective programs to maximize performance.
5. Working knowledge of profit and loss statements.
6. Must have excellent guest service relations.
7. Must obtain Safe Serve Certification.
8. Must be able to obtain and retain a gaming license through the Tule River Tribe Gaming Commission.

PHYSICAL AND ENVIRONMENTAL:

1. While performing the duties of this job, the Team Member is regularly required to talk, hear, stand, walk, sit, and to reach with hands and arms, use hand to finger, handle, or feel objects, tools, or controls.
2. Occasionally required to climb, balance, stoop, kneel, crouch, or crawl.
3. Must be able to operate in mentally and physically stressful situations.
4. Environment is of high humidity with extreme temperatures when in kitchen.
5. Must be able to lift and carry up to 50 pounds.
6. Must be able to work in a fast paced environment.
7. Noise level is low to moderate when in kitchen, and moderate when on the casino floor.
8. Exposed to cigarette smoke, ringing bells, and flashing lights when on the casino floor.
9. Must be able to perform all essential duties of the job with or without reasonable accommodation.
