Job Description
The Fishmonger – Raw Bar & Oyster, attends to the raw fish, oyster, and shellfish preparation needs of guests: selecting, shucking, cleaning, slicing, weighing, and serving. Reports functionally to the Fresh Market Manager.
- Safely and efficiently open oysters using a shucking knife or other tools.
- Clean, trim, and prepare oysters and raw seafood for various dishes, including raw oyster service, crudo, and crab claws.
- Inspect raw seafood and oysters for quality and discard any that are not suitable for consumption.
- Set up, maintain, and clean the oyster station & crudo station ensuring proper sanitation and organization.
- Rotate oysters and raw seafood regularly, ensuring the freshest product is used, and managing inventory.
- Follow all safety and sanitation guidelines when handling oysters and using equipment.
- May help with other food preparation tasks, such as prepping shrimp, lobster, crab, or other seafood items.
- May be involved in taking orders, serving food, and interacting with customers at the raw bar.
- Maintain knowledge of menu items, including oysters and other seafood selections.
- May be responsible for tracking oyster inventory and other relevant data.
- Displays and stores food in the appropriate temperature conditions as per Department of Health standards
- Performs other duties as required or assigned
Qualifications
- 2 year of experience working with oyster shucking and fresh raw fish preparation
- Excellent knife skills and shucking skills
- Customer service in open kitchen and/or sales experience in a retail environment preferred
- High school diploma or equivalent preferred
Job Requirements
- Availability to work a flexible schedule including weekends
- Ability to lift up to 50 pounds
- Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
- The ability to use a shucking knife and other tools accurately and efficiently.
- Food Handler’s License
Additional Information
Compensation: The hourly rate for this role is $21.00-$23.00
