Job Description:

The Heavy Duty Cleaner’s primary role is to maintain, clean, and sanitize the kitchen areas of the various restaurant outlets of the property as assigned.

Responsibilities and Duties:

• Responsible for inventory control for food-related equipment including kitchen equipment and appliances, utensils, dishware, glassware, flatware, etc.
• Prepare all serving equipment for buffets under direction of banquet or executive chef
• Supervise dishwashers and store room staff
• Assists in cleaning or food preparation as needed
• Maintain freshness of hot and cold food
• Monitor food levels and direct staff to refill as needed
• Keep work area in compliance with health regulation and department procedures
• All other duties as assigned
