What are the responsibilities and job description for the Food & Beverage Captain position at Fiddlers Creek Management Inc?
BASIC SUMMARY:
Provide an exceptional dining experience to members/guests by serving food and beverage items in a professional, friendly manner while following the proper rules of etiquette and the company’s high standards of customer service.
POSITION RESPONSIBILITIES:
- Lead the daily training and updates on training for the team, under the direction of leadership.
- Lead mock service training session with an assigned team.
- Monitor wine and liquor consumption and availability.
- Communicate efficiently directions from leadership to the team.
- Ensure the cleaning of all areas of the restaurant.
- Monitor the availability of tools (glassware, dishware, silverware and any type of tools related to the operation), and communicate to leadership.
- Inspect and keep all storage areas well maintained.
- Lead a pre and / or post line up with the team, identify challenges and find solutions.
- Model the appropriate behaviors that are expected of team members.
- Set up side station and perform assigned side work.
- Cordially greet members/guests by name if known. Distribute menus.
- Take beverage orders provide to the Bartender. Garnish drinks as appropriate.
« Take food orders. Answer questions and suggest menu items.
- Have full knowledge of menus and specials including portion size, ingredients and cooking methods, wine varieties and varieties offered on the wine list.
- Turn orders into kitchen and inform kitchen staff of any special requests.
- Serve meal; place dishes by course in front of each guest.
- Ensure members/guests satisfaction.
- Suggest and serve dessert, coffee and after dinner drinks.
- Verify accuracy of all state and federal taxes, tips and other charges on the check; present the bill.
- Handle all cash and credit cards as applicable. Assess charges to member’s accounts as applicable.
- Keep tables, dining room and service stations immaculate.
- Advise manager of any complaints as they occur.

EDUCATION/EXPERIENCE/OTHER REQUIREMENTS:
- High school diploma or equivalent required.
- Two-year previous experience in food industry preferred.
- Effectively present information in one-on-one and small group situations to guests, clients and other associates of the organization.
- Listen effectively; speak, read and write fluently in English.
- Responsible Vendor and Food Handler Certificates.
- Work well under pressure and handle difficult situations.
Salary : $24,500 - $31,000
