Job Summary:
We are seeking an experienced and skilled Barbecue Pit Master to join our team. The
ideal candidate will be a culinary artisan with a deep understanding of traditional
smoking techniques, meat preparation, and flavor development. As our Pit Master, you
will be responsible for overseeing the entire barbecue process, from selecting the right
cuts of meat to managing the smoking and cooking process, ensuring every dish meets
our high standards of quality and taste.

Key Responsibilities:

  • Meat Selection and Preparation:
  • Select and prepare various cuts of meat for smoking, including brisket,
ribs, pork shoulder, chicken, and sausage.
  • Trim, season, and marinate meats according to our proprietary recipes
and standards.
  • Maintain inventory of meats and smoking supplies, ensuring freshness
and quality.

  • Smoking and Cooking:
  • Operate and maintain barbecue pits, smokers, and grills, ensuring optimal
cooking conditions and temperatures.
  • Monitor the smoking process, adjusting heat, smoke, and humidity levels
to achieve the desired flavor and texture.
  • Ensure all meats are cooked to perfection, with consistent tenderness,
juiciness, and flavor.
  • Quality Control:
  • Conduct regular checks to ensure all dishes meet our quality and
presentation standards before they are served.
  • Maintain cleanliness and organization of the pit area, ensuring compliance
with health and safety regulations.
  • Manage and maintain smoking equipment, performing routine
maintenance and troubleshooting as needed.
  • Menu Development:
  • Collaborate with the culinary team to develop new barbecue recipes and
menu items.
  • Experiment with different smoking techniques, wood types, and
seasonings to create unique and flavorful dishes.
  • Stay current on barbecue trends and innovations, incorporating new ideas
into our offerings.
  • Team Leadership:
  • Train and mentor junior kitchen staff on proper barbecue techniques and
safety procedures.
  • Work closely with the kitchen and front-of-house teams to ensure smooth
service and excellent customer experiences.
  • Assist in scheduling, inventory management, and other operational tasks
as needed.

Qualifications:

  • Proven experience as a Barbecue Pit Master or in a similar role.
  • Deep knowledge of various smoking techniques, wood types, and meat
cuts.
  • Strong understanding of food safety and sanitation standards.
  • Ability to work in a fast-paced, high-pressure environment.
  • Excellent attention to detail and commitment to quality.
  • Strong leadership and communication skills.
  • Flexibility to work evenings, weekends, and holidays as needed.

Preferred Qualifications:

  • Culinary training or certification.
  • Experience in menu development and recipe creation.
  • Familiarity with regional barbecue styles and traditions.

Physical Requirements:

  • Ability to stand for extended periods.
  • Capability to lift and carry heavy items (up to 50 lbs).
  • Tolerance for working in hot environments.
