JOB OVERVIEW:

The Assistant Executive Steward is responsible for co- leading the Stewarding team to ensure the resort's kitchens are clean and sanitary in accordance with all applicable Texas state sanitation rules and regulations. Responsible for cleaning, transporting, and storage of all china, glassware and silverware throughout the resort. Maintain cleanliness in all kitchen areas and back dock.

ESSENTIAL JOB FUNCTIONS:

• Assist with interviewing, training, and coaching Associates.
• Recommend increase or decrease in staffing levels depending on business levels; create and adjust work schedules accordingly.
• Ensure proper Inventory of Equipment are accurate.
• Update and keep current with MSDS Book.
• Ensure Stewarding Team maintains sanitation and cleanliness of all areas of the dish room, kitchen aisle, and dock area.
• Maintain top organization and cleanliness in all walk-in coolers and food storage areas on a daily basis.
• Ensure all kitchen and back dock areas are neat, clean and sanitary.
• Follows proper handling of Chemical and Chemical Storage.
• Enforces proper use and cleaning of all dish room machinery.
• Enforces proper cleaning routines for service ware, equipment, floors, etc.
• Assists with china, glass and silver inventories.
• Inspects supplies, equipment, and work areas in order to ensure efficient service and conformance to standards.

MINIMUM QUALIFICATIONS:

• High school diploma or GED; 4 years experience in the procurement, food and beverage, culinary, or related professional area. OR 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 years’ experience in the procurement, food and beverage, culinary, or related professional area.
• Food Handlers certificate; Servsafe Manager certificate.
• Driver’s license and satisfactory MVR for insurance purposes.
• General computer and office skills to include email, and MS Office Suite.

ADDITIONAL QUALIFICATIONS:

• Requires problem solving abilities.
• Strong interpersonal and communication skills.
• Demonstrated understanding and knowledge of the application of sanitation procedures.
• Ability to coach, lead, and mentor the department staff.
