The expected base wage range for this position is $64,480 to $85,000 annually/per hour. This position may be eligible for additional compensation according to the Company’s policies, as they may be amended from time to time.
ESSENTIAL PURPOSE: To supervise the preparation of luxury resort quality pastries and baked goods to be served in all hotel food outlets.
ESSENTIAL DUTIES:
- To understand and respond to all guest needs and requests in a timely and professional manner.
- To assist, as directed, to train, schedule, and support Pastry staff, to ensure efficient and professional preparation of pastries and baked goods.
- To work with Outlet CDC’s to develop and execute creative and delicious dessert menus.
- To strive to maximize Departmental profitability by monitoring BEO pricing, menu pricing, and portion control.
- To eliminate waste and monitor labor within established guidelines.
- To present high-end, fine dining and quality desserts for all tastings and site inspections.
- To portion, plate, and tray all desserts for hotel food outlets
.•To review banquet function sheets and leisure counts daily, in order to establish work detail lists for Pastry staff.
- To maintain a reference file of current recipes, and continually develop new pastry items.
- To requisition pastry supplies, as needed and approved.
- To fill pastry orders, as requested.
- To promote and comply with all policies and procedures of JC Resorts LLC.
- To immediately report all suspicious occurrences and hazardous conditions.
JOB KNOWLEDGE & EDUCATION LEVEL: High school diploma or equivalent preferred. English
fluency required. Spanish language ability helpful. Must have minimum four years experience
in pastry preparation and decorating, including two years in a supervisory position. Show
pieces optional. Familiar with OSHA, SB198, local Department of Health regulations, and
relevant current laws governing handling of hazardous substances. Valid County of San Diego
Food Handler’s Card is required. Hotel experience preferred.
SKILLS AND APTITUDES: Detail oriented. Organized and efficient. Safety-minded. High quality
standards for production and service. Courteous, friendly manner. Good team player.
Customer service focus. Able to work productively with little supervision. Trustworthy and
reliable. Able to effectively manage staff.
WORKING ENVIRONMENT: Works indoors throughout shift in clean, well-lighted area. Frequently
works behind hot ovens. Work space is small and frequently congested. Business levels may
require fast work pace. Makes frequent short trips to the refrigerator, freezer, and storeroom.
Kitchen may be moist, warm, and odorous from cooking foods. Kitchen floor may be slippery
from moisture and grease. Bi-level structure.
PHYSICAL DEMANDS: Stands and walks short distances throughout shift. Frequently required to
handle and move objects weighing up to 50 lbs. over short distances. Bends, stoops, reaches,
pushes, pulls, and lifts to perform routine job tasks. Must be able to work well under pressure.
Frequent use of stairs, daily.
