What will I do in this role with Judson?
As an Executive Chef, supporting our mission will include the following responsibilities:
- Practice proper hand washing, glove use, and other sanitation guidelines
- Review daily menu, specials and spreadsheets.
- Demonstrate knowledge of specialized diets and allergens
- Demonstrate role model effective courteous communication skills with associates, peers, residents and visitors.
- Ability to perform all duties required by the positions supervised in the dining services department.
- In coordination with Sous Chef, responsible for directing the day-to-day operation of production team; set expectations of production associates.
- Coordinate purchasing requirements; including forecasting, ordering, receiving, and inventory/storage of all supplies.
- Setup and maintain reports necessary to deliver meals to serving areas.
- Oversee sanitation program including checklists and daily documentation.
- Perform daily & weekly sanitation inspections. Assure availability of approved cleaning chemicals.
- Assist in developing department goals.
- Assist in hiring, training, HR reporting, and corrective actions needed to maintain neat, responsive, well trained, safety and quality focused team.
- Have a working knowledge of the union contract.
- Ensure equipment and supplies needed for service operations are available.
- Oversee equipment repairs with maintenance and vendors as needed.
- Assist with menu and pricing development for Café Louise
- Participate in Judson programs/projects as designated.
- Coordinate and plan (in some cases help setup) catered events in coordination with Director and Assistant Director & Dining Room Manager as other department managers and staff.
- Oversee &/or prepare special function foods in timely fashion & assist with setup if necessary.
- Ensure that daily menu offerings are available in a timely, appealing and temperature desired manner.
- Collaborate with Director to develop cycle menu, chef specials and special theme meals.
- Designated goals, regulations and guidelines are met (Especially Food Cost)
- Provide periodic chef demonstrations for residents, guests for marketing events.
- Record any schedule changes to ensure staffing patterns are followed.
- Ensure all supplies are maintained to meet operating demands with minimal disruption.
- Invoice reporting and all reports completed in a timely manner.
- Oversee/Conduct training programs initiated to advance the skills of associates.
- Coordinate daily production meetings or pre-service meetings with production associates each day.
- Collaborate with Sous Chef to complete 90-day evaluation of all new production associates as well as the completion of annual performance appraisals for all associates under direct supervision.
- Maintains a record of acceptable punctuality and attendance.
- Adhere to all company rules and safety procedures.
- Perform other duties as assigned.
What do I need for this role with Judson?
- Must have minimum of Associate Degree in Culinary Degree
- 3-5 years management experience in senior living or equivalent
- Must have ServSafe certification.
- Must be organized and detail oriented, able to handle multiple tasks concurrently.
- Must have effective communication skills, be courteous and considerate of others.
- Read, write and follow complex tasks.
- Must be able to work flexible days/times.
- Must be able to work well under pressure and maintain composure under stressful conditions.
- Computer skills in Excel, Word, Publisher and Financial Software. Knowledge in POS systems
