We are currently seeking an experienced and skilled Broiler Cook to join our back-of-house team. This individual will play a key role in executing precision-cooked steaks and proteins, consistently delivering exceptional flavor and presentation in a high-paced, high-expectation environment.
Key Responsibilities
- Operate and maintain the broiler station, preparing steaks and other proteins to exact temperature specifications (rare to well done).
- Ensure consistent cooking, seasoning, and plating of all items from the broiler according to restaurant standards.
- Monitor and control the broiler temperature to ensure optimal cooking conditions.
- Coordinate with the expeditor and kitchen team to ensure timely delivery of all food orders.
- Handle high-quality cuts of meat with care and respect for butchery and aging processes.
- Maintain a clean, organized, and sanitary work station in compliance with health and safety regulations.
- Assist with daily prep tasks related to the broiler station, including marinating, portioning, and seasoning.
- Follow all food safety guidelines and HACCP standards.
- Communicate effectively with team members and front-of-house staff to ensure seamless service.
- Participate in end-of-shift breakdown and cleaning procedures.
Qualifications
- Minimum 2–3 years of experience in a high-volume, fine dining or upscale steakhouse environment.
- Expert knowledge of meat temperatures, doneness levels, and various steak cuts (e.g., ribeye, porterhouse, filet mignon, NY strip).
- Proficiency in operating a commercial broiler or grill with consistency and safety.
- Ability to work under pressure while maintaining composure and high attention to detail.
- Strong understanding of kitchen workflow, ticket timing, and station setup.
- Must be punctual, dependable, and team-oriented.
- Culinary education or formal training is a plus, but not required.
Physical Requirements
- Must be able to stand for extended periods (8 hours).
- Able to lift up to 50 pounds.
- Comfortable working in a hot, fast-paced kitchen environment.
- Must be able to handle sharp instruments and hot equipment safely.
