Job Summary:
Proof Bread is a renowned artisanal bakery dedicated to crafting the finest handcrafted bread and pastries. We are currently seeking full-time and part-time Bakery Apprentices to join our team. This position reports to the Bakery Manager and works closely with teammates and staff at all levels of the organization.
The Bakery Apprentice ensures operational excellence through the quality baking of products, maintains facility cleanliness and organization, sets daily proofs, performs daily food service production, produces various sourdough loaves and doughs for all Proof Bread locations, and promotes sales by educating customers on our unique sourdough products.

Key Responsibilities, include but are not limited to:
Bakery Production (Mixing, Shaping, & Logistics)
- Operate a sourdough starter tank, maintain sourdough starter, and understand how to judge acceptable fermentation and readiness for mixing use
- Understand dough development and order of ingredient incorporation
- Operate commercial mixers according to set timelines and mixing parameters
- Understand how to gauge mixer volumes, plan order of operations, and be able to follow set mixing recipes with accuracy and efficiency
- Understand how to set proper mixing workflows and gauge urgency according to dough temperatures
- Execute dough development through maintenance and quality of folding and folding timelines
- Operate a table-top scale to ensure accurate weight of ingredients for mixing and dough for shaping
- Weigh and shape breads according to set pars and quality parameters
- Organize and sort breads for daily transfer and accurately complete transfer logs
Bakery Production (Baking):
- Understand sourdough process and how to judge acceptable fermentation for baking readiness
- Operate commercial ovens and bake breads and pastries according to set timelines and baking parameters
- Top, decorate, and prepare pastries for customer display
- Monitor items for quality control and report any issues to management
- Process, prepare, and label food service ingredients for distribution to other facilities
- Work in an organized fashion with an emphasis on time- and task-management
- Consider needs of and prepare for next shift success
- Organize products for daily transfer and accurately complete transfer logs
- Uphold cleanliness and facility maintenance routines
Customer Service
- Create aesthetically-pleasing product displays to entice customers to make purchases
- Greet every customer in an authentically friendly, proactive, and welcoming manner
- Have a strong understanding of and educate customers on all Proof products with corresponding talking points to help encourage sales
- Actively build relationships with clientele to encourage repeat business and maintain positive reputation for Proof Bread in the community
- Promote ways to find, use, and store Proof Bread
- Package orders and handle ready-to-eat product with respect and adherence to food safety standards
- Craft quality made-to-order coffee and tea beverages for customers
- Maintain cleanliness and order of customer areas, retail fridges, and display
- Enter daily inventory and operate a Point of Sale and handle cash with maximum accuracy
- Close cash register and customer service areas according to checklists and perform end-of-day reporting
- Prepare leftovers and submit for and manage community donations at end-of-day closing
- Promptly report issues to management or leadership
Qualifications:
- Must produce a valid ID and food handling certification
- Must work with sense of urgency and efficiency
- Must be good multi-tasker, time manager, and team player
- Work weekends and stay until all tasks are completed
- Position may require safely operating lift gates on box trucks on occasion (training to be provided as needed)
- Should be able to lift 50 lbs without complication
- Must be able to stand for the entirety of a shift, up to 12 hours
