KEY RESULTS:
Ensure liquid ingredients are prepared to specifications prior to production. Clean all equipment at the end of production. Comply with Company policies and safety procedures.
SPECIFIC TASKS:
Confirm Packing Line Requirements with Supervisor
- Broth Type
- Oil Requirements
Transfer Bulk Broth Ingredients & Oil from Storage Area to Broth Kitchen
- Before transferring Palletized ingredients to the Broth Kitchen, ensure the product is not on a wooden pallet. If so, transfer to a plastic pallet before entering packing room.
- Transfer pallets of ingredients or oil per production requirements, ensuring there are enough ingredients in the broth kitchen to sustain production without interruption.
Daily production requirements include oil, broth and salt.
Record Required Data on “Daily Broth Kitchen Control Record”
- Before mixing ingredients, record all required information on the Daily Broth Kitchen
Control Record.
Mix broth in mixing tank as required for production lines
- Verify broth mixture required and verify recipe.
- Add water to holding tank.
- Remove outer layer of paper from each bag of ingredients to prevent any contaminants from entering broth mixture and to prevent cross contamination of allergens.
- Measure the ingredients with container on digital scale; according to recipe.
- Add dry ingredients one at a time.
- Turn on mixture for one minute after the addition of each ingredient.
- Add defoam to mixture as needed.
Transfer prepared broth to holding tanks for packing lines
- Open transfer valve at mixing tank.
- Open transfer valve at holding tank.
- Switch on pump to transfer broth from mixing tank to holding tank.
- Switch off pump and close valves.
Add oil to Holding Tanks as required for Production Lines
- Add oil into holding tank.
Monitor Broth and Oil Temperatures
- Observe and record broth temperature.
- Observe and record oil temperature.
Maintain a clean work area
- After transferring batch mixture to the holding tanks, wash down mixing tanks with water, ensuring there is no sediment or contaminants left on or around the mixing tanks.
- Wash down platform and rails so they are free from broth mixture.
- Discard all trash and empty bags in an approved container.
- Remove leftover ingredients and take them to the Critical Materials Cage.
Comply with Company policies and safety requirements, additional duties as required by supervisor.
MINIMUM JOB REQUIREMENTS:
- High School Diploma, GED or equivalent work experience
- Minimum 1 year Manufacturing experience
- Able to read, write and speak English
- Able to lift up to 50 lbs
- Basic math skills
- Able to work any shift including overtime and/or weekends
