Essential Functions & Responsibilities
· Lead, supervise and mentor all production crew members in all departments
· Monitor FIFO rotation of raw materials
· Confirm the quality and proper aging of beef loins and ribs
· Monitor equipment assembly and performance for maintenance issues
· Monitor and approve pre-operational sanitation checks
· Monitor and approve all HACCP checks
· Monitor and approve e. coli tests
· Monitor packaging, labeling and boxing of finished products.
· Facilitate and monitor training of all new crew members
· Manage equipment and production process for maximum efficiency
· Promote the company culture and values
· Plan, document and communicate production needs daily
· Determine labor requirements daily
· Document all raw materials used each day
· Investigate customer complaints and non-conformance issues
· Develop, recommend and monitor corrective and preventive actions
· Identify training needs and organize training interventions to meet quality standards
· Meet and exceed production goals set for this shift
· Champion new initiatives by the department and company

· Extensive COP knowledge and experience, minimum 5 years
· Experience in Butchering and cutting meat, minimum 5 years
· Strong attention to detail

· Must be able to lift at least 60 pounds
