What are the responsibilities and job description for the Sous Chef position at Vern's?
We are looking to bring on a full-time experience Sous Chef to our team! You will be working closely during service alongside our Chef/Owner Dano and team of Chefs & Cooks in the Vern's kitchen. Training will include mastering every station, eventually landing in a Managerial role as a Chef/Expeditor during service.
Our kitchen is a tight, collaborative space. Positive attitude is a must - inspiring and motivating our team is the Number 1 goal. We cook solely based on what is available from our close network of farmers and purveyors - seasonality and quality of ingredients is the entire ethos of our menu. We seek team members who align with this standard and share our same passion for this industry.
This job will entail:
● Work with our team of Chefs to create new menu items and specials.
● Write recipes and adjust recipes as needed.
● Attend weekly/daily meetings with both BOH/FOH teams.
● Be ahead of seasonal changes to allow smooth transitions between dishes.
● Delegate prep/service execution responsibilities to kitchen staff.
● Manage and motivate all BOH employees (cooks, prep cooks, dishwashers, etc.) This includes training, professional development, feedback, evaluation.
● Oversee quality control on all finished items.
● Maintain food and labor costs, and communicate cost concerns to Owners and CDC
● Communicate with upper management daily regarding operations, maintenance and kitchen operation issues, personnel changes, vendor/product issues, etc.
● Help to ensure that there is never excessive overtime unless otherwise approved.
● Compile/check invoices for accuracy. Regularly check prices from vendors to assess best
costs, taking best quality into account.
● Give specific direction to prep and line cooks on prep and receiving/storing/rotating
product.
● Consistently maintain a high level of cleanliness throughout the facility, including the
dish station, kitchen, coolers, prep areas and common areas.
● Ensure that all staff has clean uniforms and all proper tools at each shift.
● Assist and execute with offsite events as requested by Owner & CDC.
● Assume all duties of fellow Chefs when covering shifts.
