Waialae Country Club is a private membership club, which provides its members with a championship golf course, dining services, health/recreational facilities, and hosts the PGA Tour's Sony Open in Hawaii. Position: Assistant Director of Food & Beverage

Status: Full-Time (40 hours per week)

Department: Food & Beverage

Reports to: Director of Food & Beverage

Job Duties

  • Assists with managing and overseeing the Food & Beverage team to ensure a positive and cohesive work environment. Provides delegation of duties to ensure service is delivered to a quality expected of a high-end private club.
  • Assists with hiring, training, and supervising Food & Beverage employees. Evaluates staff performance and assists with conducting performance reviews.
  • Assists with scheduling Food & Beverage employees; and reviewing/approving timesheets.
  • Assists in ensuring training of each team member at their designated tasks; and crossover training to develop them in other areas. Assures that all employees are trained on the equipment they will be using; and all safety and sanitation procedures.
  • Develops and/or assists with implementation of policies and procedures for all Food & Beverage activities.
  • Assists in ensuring that all standard operating procedures for revenue and cost control are in place and consistently utilized including proper reconciliation of Point-of-Sale systems and invoice processing. Ensures proper recorded history of daily business volumes as well as special event business.
  • Ensures that all Club service standards are met in order to meet and exceed member expectations. Areas of focus to include proper reservation systems, member interaction on a regular basis, and establishing quality control guidelines in all areas.
  • Oversees all aspects of the beverage program under the guidance of the Director of Food and Beverage. Develops and maintains all wine, cocktail and beer lists, and all other beverages, while supporting budget goals.
  • Assists in physical inventory procedures and verification; and ensures updated information is received by the accounting department in a timely manner.
  • Maintains appearance, upkeep and cleanliness of all Food and Beverage equipment and facilities. Participates in maintenance issues and projects in conjunction with the facilities department.
  • Observes and ensures compliance with all applicable health, safety and sanitation laws and the rules and regulations of the Honolulu Liquor Commission.
  • Provides immediate and timely service to members and guests. Investigates and resolves service and food quality complaints.
  • Attends staff and management meetings.
  • Assists in coordinating and overseeing Food & Beverage service and staffing in the clubhouse and skyboxes during the Sony Open.

Requirements

  • Bachelor’s Degree or formal culinary education; 5 years of progressive Food and Beverage management experience including multiple outlets; or equivalent combination of education/experience.
  • Thorough knowledge of casual and fine dining food and beverage operations including wine knowledge.
  • Ability to work a flexible schedule including evenings, weekends and holidays.
  • Hotel and/or private club experience preferred.
  • Must have Liquor Commission Card and TB Clearance.

Annual Salary Range: $85,000 - $95,000
