Job Description: We are seeking an experienced and passionate Chef de Cuisine to lead our small but ambitious kitchen. This role offers significant autonomy and the opportunity to elevate our food program to new heights. The ideal candidate will be responsible for creating and executing a dynamic, seasonal menu, managing kitchen operations, and ensuring the highest standards of food quality and presentation.
Reports to: Ownership
Key Responsibilities:
- Lead and manage a kitchen team of two (1 line cook and 1 porter)
- Oversee all aspects of kitchen operations, including scheduling, hiring, training, and staff management
- Ensure compliance with NYC Department of Health (DOH) protocols, maintaining impeccable cleanliness and safety standards
- Develop and execute a seasonal Mediterranean menu with a focus on high-quality, locally sourced ingredients
- Collaborate with a chef consultant on research and development for new dishes and menu changes
- Manage inventory, minimize waste, and utilize byproducts efficiently
- Maintain strong relationships with purveyors and suppliers
- Handle ordering, managing food costs, and menu pricing effectively
- Work each station of the line as needed, ensuring consistency and excellence in every dish
- Work closely with the owner and general manager to maintain all standards and practices set forth
Ideal Candidate:
- Motivated and passionate about Food & Wine
- Experienced in a similar role with a solid track record
- Strong leadership qualities and team-oriented
- Detail-oriented and capable of maintaining high standards
- NYC Food Handler’s License
- Ability to handle and execute high-volume service
- Excellent communication and organizational skills
- A self-starter with a creative approach to menu development
- Interest in and experience working with seasonal products
