The World Equestrian Center located in Ocala, Florida is searching for a Chef Tournant to join our team!
The Chef Tournant primary responsibilities are to ensure all communication, standards, policies, and expectations are communicated to his/her team and then executed flawlessly. This leader will be expected to rotate into different areas in regards business demands and career development. This individual will perform management tasks, such as training cooks, setting the production flow, managing inventory, and ensuring that kitchens meet safety and sanitation standards.
Primary Responsibilities:
- Work with other F&B managers and keep them informed of F&B issues as they arise.
- Keep immediate supervisor fully informed of all problems or matters requiring his/her attention.
- Coordinate and monitor all phases of Loss Prevention in kitchen areas.
- Prepare and submit required reports in a timely manner.
- Monitor quality of all food product and presentation.
- Maintain refrigerator and kitchen in clean, organized manner to facilitate the high-volume production necessary to achieve company goals.
- Make cooks aware of daily forecasts and customer counts so that they can be prepared to serve both hot and cold food on time.
- Respond to guest complaints in a timely manner.
- Ensure compliance with SOP’s in all outlets.
- Ensure compliance with requisition procedures.
- Understand, implement, and monitor corporate promotions in outlets, including buffet and three-meal concept standards.
- Know and enforce all local health department sanitation laws.
- Know how to compute daily food cost.
- Assess food portion size, visual appeal, taste, and temperature of items served.
- Check food purchases for proper ordering, quality, and price structure.

Qualifications, Education, Experience, Skills, and Abilities:
- Culinary degree or related training equivalent
- Minimum of 5 years’ service experience, with 2 years of leadership experience in the kitchen
- Must be able to work safely in a kitchen environment with high temperatures and humidity
- Food Safety Certificate preferred
- Must be able to communicate effectively with guests and co-workers

Salary : $47,600 - $60,300
