Job Title
The Culinary Leader is accountable for ensuring the highest quality culinary experience in our restaurant and special events.
Key Responsibilities:
- Oversee the activities of kitchen staff with a focus on quality and cost control.
- Assist with weekly scheduling for cooks to align with business needs, avoiding over-staffing and overtime.
- Manage employee breaks in accordance with company policies.
- Develop and review prep lists for all stations.
- Prepare daily food orders and approve daily specials before service.
- Provide staff and the Executive Chef with recipe cards for all food produced.
- Communicate relevant daily food requisitions to the purchasing department and cost control team.
- Review Kronos reports and ensure accurate labor records.
- Train all kitchen employees in their individual duties, required knowledge, and skills.
- Counsel, discipline, and evaluate kitchen employees as needed.
- Inspect mise en place for each station before service to ensure completeness.
- Maintain the overall cleanliness and organization of the kitchen.
- Monitor waste and spoilage through attention to detail.
- Contribute to periodic menu reviews and revisions.
- Prepare and cook food to high standards.
- Report any faulty equipment or unsafe conditions directly to the Engineering Department.
- Effective communication with staff from both the front and back of the house is essential.
- Compliance with all safety and health policies and procedures is mandatory.
- Additional duties may be assigned by the Executive Chef.
Requirements:
- A graduate of an accredited culinary program or equivalent experience under a respected chef is preferred.
- Current Sanitation certification is required.
- Excellent cooking, supervisory, and sanitation skills are essential.
- Knowledge of all stations is necessary.
- A broad understanding of varied cuisines and ability to incorporate regional ingredients into menus is required.
- Ability to present cooking demonstrations is beneficial.
- Familiarity with MS Office Suite is desired.
Salary : $90,000 - $115,000
