JOB SUMMARY
Under the general supervision of the Dietary Manager, the Culinary Kitchen Supervisor is responsible for the planning, organizing and direction of the dining department in a skill facility setting, while ensuring the highest standards of quality, service and cleanliness to Glencroft residents, guests and staff members in accordance with the mission and values of Glencroft Center for Modern Aging. This position is responsible for maintaining high standards in service, food preparation, resident relations, costs containment, personnel, and safety, sanitation, training and special functions. This position assists in the maintenance of sound inter-departmental relations and the integration of the dining services department with Glencroft’s plan of operations. The Culinary Kitchen Supervisor, manages employees within the framework of teamwork and empowerment. The Culinary Kitchen Supervisor will possess a genuine interest in and concern for geriatric, chronically ill and/or disabled persons. Must be able to fluently communicate in or to take or give direction or guidance in the English language.
ESSENTIAL FUNCTIONS
- Regular attendance is considered an essential function of this position and is necessary for the efficient operation of the business.
- Partners with Human Resources on but not limited to the following: interviewing, hiring, onboarding, training, performance evaluation, corrective actions and investigations of all dining staff members in accordance with the direction received from the Dietary Manager.
- Works with the Dietary Manager to produce the work schedule for the dining services department and ensures that there is less than 2% overtime every pay period.
- Responsible for overseeing special events set-up, execution, and break down. Responsible for handling resident, guest and employee complaints, if any, and rectifying problem situations.
- Develops and maintains a high level of staff morale, a low turnover rate, and employee motivation through daily meetings and a consistently firm but fair system of discipline.
- Responsible for working closely with the Dietary Manager to ensure that the dining services department is running at or under budget and takes the necessary steps to maintain this standard. Incumbent is to monitor budget weekly and report monthly.
- Develops and maintains controls to ensure the production of food is meeting Glencroft’s quality standards. Enforces control and quality assurance on a continual basis. Maintains continual state of cleanliness and sanitation.
- May assist the Senior Director of Dining Services and Dietary Manager in the predicting, planning, monitoring and evaluation of cost programs used by the dining services department.
- Assist with menu planning and writing and maintaining recipes and menus on a weekly basis.
- Conducts a “Show Time” meeting before every meal so staff members can best describe the menu choices and are aware of ingredients in the dishes to be served.
- Circulates in dining areas during meal periods to field resident/guest comments pertaining to service and food quality.
- Responsible for the daily and weekly ordering of department food.
- Actively participates in committee meetings, as appropriate and volunteers valuable feedback in these meetings.
- Maintains good working relationships with all residents, dining services staff, and the management team at Glencroft.
