Job Description
PASTRY CHEF
Essential Functions
- Create and prepare a variety of new dessert concepts across all our locations within the Theme Park and CityWalk.
- Work with Culinary R&D and Catering Teams to innovate new offerings, seasonal needs and shoulder events with the creation and execution of new highly themed offerings.
- Oversee dessert/pastry program quality and performance currently in place.
- Monitors and updates recipes from ideation to full production.
- Lead ordering and inventory processes.
- Ability to manage the execution, decoration, finishing and packaging of mass production to ensure the presentation is first class and completed on time to support demands.
- Provides preparation, direction and supervision of baked goods going to the field by performing training, quality control and consistency with monitoring cost of goods and spoilage.
- Coordinates production and delivery timing with other departments such as Sourcing, Food Distribution Center and Operations.
- Check quality and cleanliness of material and condition of equipment and devices used for cooking/baking.
- Must be able to effectively execute ordering needs of future production and coordinate ordering with Sourcing.
- Ensure compliance with all local, state and federal laws regarding food quality, safety, labor, employment, sanitation and Union guidelines, as well as Company policies and procedures.
- Completion of administrative responsibilities for the department to include review of team member schedules, daily operational work plans, cleanliness and sanitation checklists.
- Maintain all labor needs and cost management associated with production.
- Identify staffing needs and help recruit and train personnel.
- Supervise hourly staff and provide direction, performance reviews, and coaching to team; providing re-training as needed.
- Mentors and counsels team members and enforce appropriate policies and procedures ensuring compliance of departmental standards.
Qualifications
Qualifications/Requirements
- Graduate of an accredited culinary school preferred.
- HACCP training preferred.
- 3 years in a supervisory Pastry Sous Chef position required; or equivalent combination of education and experience.
- Must be available to work on weekends, holidays and nights as necessary.
- Must be able to manage, provide feedback and administer disciplinary action to team members.
Desired Characteristics
- Must have a high degree of artistic ability in the creation of cakes, pastries and specialty show pieces. Training in specialty areas such as pulled sugar, chocolate work preferred.
- Demonstrates vast knowledge in all areas of pastry, baking, decorating, etc.
- Continually model fair judgment and a strong sense of ethics in deciding how to respond to internal (TMs) and external customers’ (guests) concerns and issues while keeping company business models in mind.
- Extensive knowledge of food and food handling process. Required ability to cook in a high volume environment.
- Must have excellent written and verbal skills to effectively communicate with all levels of the organization.
- Proficiency in Microsoft Office Applications – Word, Excel, PowerPoint, and Outlook preferred.
- Strong interpersonal, analytical, and organizational skills.
- Ability to work in a high paced, repetitive team-work environment.
- Able to manage effectively under deadlines.
- Previous experience with creating and managing budgets.
Salary Range: $80,000 - $95,000; bonus eligible
