Overview
This position is responsible for performing financial, operational, and technical analysis. This position provides support to enterprise management by ensuring business strategies and financial goals are achieved.
Responsibilities
Essential Job Functions:
- Establish and maintain policies as they relate to the receipt, issuance and general controls of all products ( Food, beverage, Facilities, Retail, Spa, Marketing & HR)
- Monitor daily revenues and costs and prepare a daily and month to date food and beverage cost
- Cost and track sales, house charges, comps, employee meals and other similar cost credit items on a daily basis
- Work with the Executive Chef and Beverage Manager to maintain menu costs on all food and beverage items and make F&B management issues
- Establish and monitor constantly all food and beverage controls to ensure compliance with policies and procedures and perform spot checks as necessary in pursuit of controlling costs and identifying problem areas and prescribing corrective action as they pertain to all product, operating equipment and supplies
- Assist in the development of financial statements including cost allocations of all F&B outlets, retail, spa & facilities departments
- Coordinate F&B, Retail, spa, Facilities & uniform products and supplies and monitor physical inventories to ensure accuracy
- Verify tabulation, with use of MMS, of the above inventories and prepare monthly inventory adjustments journal entry
- Monitor and report the daily executions report i.e. voids, adjustments, moves; Monitor and track costs in conjunction with banquet checks
- Assist in performance of all control functions as required by SOP and internal Control Policy. These include, but are not limited to, menu costing, yield tests, par stock checks, random visual checks in outlets, monitoring of storeroom procedures, monitoring of receiving procedures, monitoring cafeteria controls, etc.
- Maintain integrity of inventories by using current up to date prices of stock items or accurate weighted averages
- Review consumption data and analyze possible trends and make recommendations
- Analyze purchases each month for MMS & LMS to balance with the general ledger
- Monitor inventory locations and storerooms
- Improve food costs monitoring by developing improved tracking of food costs
- Establish and monitor procedures for food & beverage transfers, crosscheck food and beverage transfers’ prices, extensions and totals
Qualifications
Bachelor's degree program in the area of finance, business or accounting. Advance degree and/or professional certification are preferred. Experience of at least two (2) to four (4) years with significant exposure in financial analysis in casino hotel industry.
- Must have a high proficiency level with computer skills to include MS Word, Excel, Access
- Stratten Warren / MMS experience preferred
- Must possess knowledge of hotel/casino operations as it pertains to accounting procedures and internal controls
- Must possess ability to manage multiple tasks
- Must be detail-oriented
- BA or BS degree in the area of Finance, Business or Accounting with two to four (2-4) years of significant exposure in financial analysis in the casino/hotel industry.
- Advanced degree and/or professional certification is preferred, or an equivalent combination of education and/orwork experience.
- Must possess the ability to define problems, collect data, establish facts and draw valid conclusions,
- Ability to interpret an extensive variety of technical instructions in mathematical or diagram form anddeal with several abstract and concrete variables.
- Must be able to handle non-standard situations where some judgment must be exercised.
Work Environment:
Duties and responsibilities are typically performed in a professional office setting, but there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, second hand smoke and excessive noise.
While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
