POSITION SUMMARY:
Ensure the even flow of food production and guest services through cleaning and sanitizing of all restaurant wares and restrooms.
ESSENTIAL PROFESSIONAL FUNCTIONS:
• Cleans and sanitizes restrooms.
• Operates automatic dish machine.
• Organizes plates, utensils, and smallwares.
• Washes and sanitizes kitchen utensils and pans.
• Cleans the dish room and production areas as necessary.
• Monitors dish and glass levels -- requisitions replacements as needed.
• Conducts daily inspections of dish room areas looking for sanitation and personal injury hazards.
• Recognizes and reports all necessary maintenance promptly.
• Implements weekly detail cleaning routines.
• Takes out kitchen trash and recyclables as needed.
• Suggests improvements to the operating format.
RESULTS UPON WHICH PERFORMANCE IS EVALUATED:
• Guests have a positive reaction to cleanliness of restrooms. No complaints of improper sanitation or depleted paper products.
• Dish machine is always clean, properly stocked with chemicals, and free of lyme buildup.
• Dish room is neat and organized.
• Utensils are clean and available when needed.
• Dishes and glasses are spotless.
• Plate and glass levels never drop below what is needed to ensure smooth operations.
• Dish room walls and floors are clean.
• Floor is kept free from hazardous material.
• Trash is never overflowing. Boxes are promptly placed in the proper receptacle.
• Co-workers recognize contributions on peer appraisals.
• Equipment problems are reported immediately.
• Sinks, shelving, and tables are kept clean and sanitized.

QUALIFICATION STANDARDS:
• Stands during the entire shift.
• Works frequently in a hot and damp environment.
• Reaches, bends, stoops, shakes, stirs, and wipes.
• Lifts and carries sacks and cases of up to 70-lb up to 20 times per shift.
• Reading and writing skills required.
• Immerses hands in water frequently.
• Hazards may include, but are not limited to, cuts, burns, slipping, tripping and injuries due to repetitive movements.
