Position Overview

We are seeking a passionate, creative, and experienced Lead Sushi Chef to lead the Sushi Bar and elevate the dining experience at 888. As a key member of our team, you will oversee sushi preparations, ensure top-notch quality, and guide our culinary team in creating an unforgettable fusion of Japanese artistry and high-fidelity sound. This position is perfect for someone who not only masters traditional sushi techniques but also embraces innovation in a dynamic, music-inspired environment.

Key Responsibilities

• Lead the sushi kitchen, preparing an exceptional range of sushi, sashimi, and Japanese dishes that reflect the artistry of Japanese cuisine.
• Develop and execute an innovative sushi menu that pushes culinary boundaries while respecting tradition.
• Supervise and mentor junior chefs and kitchen staff, ensuring precision, quality, and consistency in every dish.
• Curate seasonal specials and exclusive offerings that highlight the perfect pairing of food and music.
• Maintain a clean, organized, and efficient sushi bar and kitchen area at all times.
• Interact with guests when appropriate, sharing your passion for sushi and creating a personalized dining experience.
• Collaborate with management to refine the overall guest experience, ensuring it aligns with the restaurant’s vision and brand.
• Uphold the highest standards of food safety, cleanliness, and organization.

Qualifications

• Proven experience as a Sushi Chef with a minimum of 5 years of experience in high-end sushi kitchens.
• Expertise in sushi, sashimi, and other traditional Japanese culinary techniques.
• A creative approach to menu development and a passion for experimenting with new flavors and techniques.
• Strong leadership skills and the ability to inspire and guide a kitchen team.
• A high attention to detail and an appreciation for the art of food presentation.
• Knowledge of food safety and sanitation standards.
• A love for music, particularly vinyl records, and an understanding of how music enhances the overall dining experience.
