Job Title: Sous Chef
Reports To: Banquet Chef
Position Purpose: Assists Banquet Chef with food preparation; cooking and presentation. Sees that food is prepared in a timely manner. Sets up and maintains workstation. Works in a clean and sanitary condition. Inspects and maintains freshness of all products.
Essential Duties and Responsibilities
- Daily inspection of walk-in refrigerators and station refrigerators.
- Monitor orderings for daily prep.
- Determining what foods are to be used for employee meals.
- Insuring low inventory.
- Help planning specials.
- Prepares and serves banquets and buffets.
- Meet with Banquet Director when needed.
- Preparing and portioning meat and fish items.
- Responsible for all dish and pot washers.
- Directly responsible for all AM kitchen staff.
- Supervise daily and weekly soup specials.
- Assumes Chef’s position in his absence.
- Properly trains banquet cooks.
- Prepares disciplinary action forms when necessary.
- Orders banquet food.
Performs any and all other duties as assigned by Supervisor.
