Department:               Food and Beverage

Job Title:                     Sous Chef

Reports To:                 Banquet Chef

Position Purpose:        Assists Banquet Chef with food preparation; cooking and presentation. Sees that food is prepared in a timely manner.  Sets up and maintains workstation.  Works in a clean and sanitary condition.  Inspects and maintains freshness of all products.

Essential Duties and Responsibilities

  1. Daily inspection of walk-in refrigerators and station refrigerators.
  2. Monitor orderings for daily prep.
  3. Determining what foods are to be used for employee meals.
  4. Insuring low inventory.
  5. Help planning specials.
  6. Prepares and serves banquets and buffets.
  7. Meet with Banquet Director when needed.
  8. Preparing and portioning meat and fish items.
  9. Responsible for all dish and pot washers.
  10. Directly responsible for all AM kitchen staff.
  11. Supervise daily and weekly soup specials.
  12. Assumes Chef’s position in his absence.
  13. Properly trains banquet cooks.
  14. Prepares disciplinary action forms when necessary.
  15. Orders banquet food.

Performs any and all other duties as assigned by Supervisor.
